Ingredients
- 2 boneless, skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons olive oil (30 ml)
- 2 tablespoons vegetable oil (28 g)
- 3 cloves garlic, minced
- 1 tablespoon lemon zest (from about 1 lemon)
- 1/4 cup lemon juice (60 ml)
- 1/2 cup chicken broth (120 ml)
- 1 tablespoon fresh parsley, chopped
Instructions
- Pat the chicken breasts dry with paper towels.
- Season both sides of the chicken breasts with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken breasts to the skillet.
- Cook the chicken for 5-6 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, reduce heat to medium and add the butter.
- Once the butter has melted, add the minced garlic.
- Sauté the garlic for about 1 minute, until fragrant.
- Stir in the lemon zest, lemon juice, and chicken broth.
- Bring the mixture to a simmer, stirring occasionally.
- Return the chicken breasts to the skillet.
- Cook the chicken in the sauce for 3-4 minutes, spooning sauce over the top.
- Remove the skillet from heat.
- Sprinkle the chopped parsley over the chicken.
- Serve the chicken immediately with the lemon butter sauce.
