Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons vegetable oil (28 g)
  • 3 cloves garlic, minced
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 1/4 cup lemon juice (60 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1 tablespoon fresh parsley, chopped


Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat.
  4. Add the chicken breasts to the skillet.
  5. Cook the chicken for 5-6 minutes on each side, until golden brown and cooked through.
  6. Remove the chicken from the skillet and set aside.
  7. In the same skillet, reduce heat to medium and add the butter.
  8. Once the butter has melted, add the minced garlic.
  9. Sauté the garlic for about 1 minute, until fragrant.
