Ingredients

  • – 340g (12 oz) packaged ramen noodles
  • – 15 ml (1 tbsp) vegetable oil
  • – 454g (1 lb) boneless, skinless chicken breast, cut into bite-sized pieces
  • – 4 cloves of garlic
  • – 5 ml (1 tsp) ginger paste
  • – 170g (6 oz) crimini mushrooms, sliced
  • – 475 ml (2 cups) broccoli florets
  • – 1 red bell pepper, diced
  • – 240 ml (1 cup) carrots, sliced
  • – 30 ml (2 tbsp) green onions, sliced
  • – 2 large eggs, beaten
  • – 180 ml (3/4 cup) stir-fry sauce, more as needed
  • – 15 ml (1 tbsp) cilantro, chopped


Instructions

  1. Start by boiling a large pot of water. Cook the ramen noodles according to the package directions. Once done, drain them and rinse under cold water. Put them aside for later use.
  2. Warm the vegetable oil in a large wok or a nonstick skillet over medium to medium-high heat. Add the chicken pieces, seasoning them with salt and black pepper. Cook for approximately 5 minutes or until all sides are browned and the chicken is fully cooked. This will be quicker in a wok compared to a nonstick skillet.
  3. Into the wok with the chicken, incorporate the garlic, ginger paste, mushrooms, broccoli, red bell pepper, carrots, and green onions. Stir the ingredients and cook until they are just starting to soften, which should take around 5 minutes.
  4. Pour the beaten eggs into the wok, allowing them to sit until they start to set, then mix them into the vegetable mixture. Add the noodles, mixing everything thoroughly. Remove from heat and pour the stir-fry sauce over the top, tossing everything to ensure it’s evenly coated.
  5. Serve the stir fry right away, garnished with chopped cilantro. Add more stir-fry sauce if desired. Enjoy your meal!
