Description
A simple and crispy breaded chicken breast made in the air fryer, providing a delightful crunch with every bite.
Ingredients
- 2 boneless skinless chicken breasts (about 5-6 ounces each) or 4 thin sliced chicken breasts
- 2 cups seasoned parmesan breadcrumbs
- 2 large eggs
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- Olive oil spray (non-aerosol)
- Shredded parmesan cheese for topping
- Lemon, parsley, red pepper flakes, and hot sauce for serving
Instructions
- Slice each chicken breast in half lengthwise to create thinner pieces. Pat them dry with a clean towel.
- Use a meat mallet to pound the chicken if necessary, ensuring even thickness for uniform cooking.
- Place the seasoned breadcrumbs in a shallow bowl. In another shallow bowl, crack the eggs and whisk them together with the kosher salt and ground black pepper.
- Dip each piece of chicken into the egg mixture, making sure to coat it well.
- Transfer the chicken to the breadcrumbs, pressing them into the meat to form an even coating.
- Preheat the air fryer to 390°F. Spray the air fryer basket with olive oil spray.
- Arrange the breaded chicken in the air fryer in a single layer. Spray each piece lightly with cooking spray.
- Cook the chicken for 6-7 minutes. Carefully flip each piece and spray the other side with more olive oil spray.
- Cook for an additional 4-5 minutes, until the internal temperature reaches 165°F.
- Once cooked, let the chicken rest for at least five minutes before slicing. Serve with a sprinkle of lemon and additional salt and pepper.
Notes
For extra crispy chicken, ensure no overcrowding in the air fryer and use non-aerosol olive oil spray for an even coating.
