Description

Learn how to make delicious air fryer chicken mini sandwiches that are crispy on the outside and juicy on the inside. Perfect for a quick and easy meal!


Ingredients

  • 1 lb. chicken breast (454 g)
  • 1 egg
  • 1 cup milk (240 ml)
  • 1/4 cup pickle juice (60 ml)
  • 1 1/4 cup flour (156 g)
  • 2 Tbsp (30 ml). powdered sugar
  • 2 tsp (10 ml). salt
  • 1 tsp (5 ml). black pepper
  • 1/2 tsp (3 ml). chili powder
  • 1/4 tsp (1 ml). cayenne
  • 1/4 tsp (1 ml). paprika
  • 1/2 cup honey (120 ml)
  • 4 TBSP. vegetable oil, melted (56 g)


Instructions

  1. Cut the chicken breast into cubes, each about an inch in size.
  2. In a large resealable bag or plastic container, combine the egg, milk, and pickle juice by whisking them together. Submerge the chicken in this marinade and let it chill in the fridge for at least half an hour, or up to four hours.
  3. In a separate large resealable bag, combine the flour mixture and shake to blend.
  4. Take the chicken cubes from the marinade in batches and toss them into the bag with the dry mixture. Shake to thoroughly coat each piece and transfer them to a wire rack. Continue until all chicken pieces are coated.
  5. Set your Air Fryer to 370°F for preheating. Line its basket or tray with parchment paper.
  6. Arrange the chicken pieces in the basket, ensuring there’s enough space for air to circulate among them. Spray olive oil over the tops and sides to cover all visible parts.
  7. Air Fry the chicken for nine minutes, then flip them over and spray the other side with olive oil. Keep Air Frying until they achieve a golden brown color and the internal temperature is 165°F.
  8. Take the chicken out of the air fryer and repeat this process for any remaining pieces.
  9. Slice your dinner rolls in half to create a top and a bottom piece. If needed, cut the rolls again to form two separate rolls.
  10. Use a pastry brush to apply the honey butter mixture on the tops of the chicken pieces. Place each chicken piece within a roll and brush the top of the bun with more honey butter mixture.
  11. Serve right away.

Notes

  • For a spicier flavor, increase the chili powder or cayenne in the flour mix.
  • Achieve extra crispiness by adding a tablespoon of cornstarch to the flour mix.
  • Enhance the taste with a touch of extra honey before serving.
