Ingredients
- 3 boneless, skinless chicken breasts trimmed of fat, and cut into chunks
- 2-3 medium zucchini thickly sliced, then cut into quarters
- 2-3 medium yellow squash thickly sliced, then cut into quarters
- 12 oz (340 g) white button mushrooms washed & quartered
- Salt & pepper to taste
- 3 tbsp (45 ml) minced garlic
- 1/3 cup (80 ml) olive oil + 2 tbsp (30 ml)
- 1/4-1/3 cup (80 ml) soy sauce
- 1 1/2 tbsp (23 ml) rice vinegar
- 1 tbsp (15 ml) sesame oil
- 1 tsp (5 ml) garlic powder
Instructions
- Combine all ingredients, except for the reserved olive oil, in a large bowl and mix until well-blended.
- Place the combined chicken and vegetables into the air fryer basket, ensuring they are spread out evenly. Pour the remaining olive oil over the top.
- Set the air fryer to 375°F and cook for 15 minutes.
- Pair the dish with steamed white rice and yum yum sauce for serving.
