Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional, for garnish)
- Lemon wedges (optional, for serving)
Instructions
- In a large bowl, combine olive oil, lemon juice, lemon zest, garlic powder, onion powder, salt, and black pepper to create the marinade.
- Add chicken pieces to the marinade and mix thoroughly until coated. Cover and refrigerate for 15-30 minutes.
- Preheat the air fryer to 380°F (193°C) for about 5 minutes.
- Arrange the marinated chicken bites in a single layer in the air fryer basket.
- Air fry the chicken at 380°F (193°C) for 10-12 minutes, shaking the basket halfway through cooking.
- Remove chicken from the air fryer and let it rest for a couple of minutes. Garnish with fresh parsley and serve with lemon wedges.
Notes
For best results, allow the chicken to marinate longer. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
