Ingredients

  • 6 chicken thighs
  • 2 tbsp (30 ml) olive oil
  • 2 tbsp (30 ml) lemon juice
  • 1 tbsp (15 ml) italian herb seasoning blend
  • 1 tsp (5 ml) celtic sea salt
  • 1 tsp (5 ml) fresh cracked pepper
  • 1 lemon, sliced thin


Instructions

  1. Combine all the ingredients, except for the lemon slices, in a bowl or bag, ensuring the chicken is well-coated.
  2. Allow the mixture to marinate for at least 30 minutes or up to overnight.
  3. Take the chicken out and let any surplus oil drip away (it doesn’t have to be completely dry, just not excessively oily).
  4. Preheat the air fryer to its maximum temperature, between 350-400 degrees, for 10 minutes.
  5. Place the chicken thighs and lemon slices in the air fryer basket, ensuring they are not overcrowded.
  6. Cook at the highest possible temperature, between 350-400 degrees, for 8 minutes.
  7. Take out the basket and turn the chicken thighs over.
  8. Continue cooking at 350 degrees for an additional 6 minutes, checking the temperature and air frying until the internal temperature reaches 165 degrees.
  9. The chicken thighs should be crispy, with clear juices, and should reach an internal temperature of 165 degrees when measured with a digital thermometer in the thickest part.
