Ingredients
- 6 chicken thighs
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 ml) lemon juice
- 1 tbsp (15 ml) italian herb seasoning blend
- 1 tsp (5 ml) celtic sea salt
- 1 tsp (5 ml) fresh cracked pepper
- 1 lemon, sliced thin
Instructions
- Combine all the ingredients, except for the lemon slices, in a bowl or bag, ensuring the chicken is well-coated.
- Allow the mixture to marinate for at least 30 minutes or up to overnight.
- Take the chicken out and let any surplus oil drip away (it doesn’t have to be completely dry, just not excessively oily).
- Preheat the air fryer to its maximum temperature, between 350-400 degrees, for 10 minutes.
- Place the chicken thighs and lemon slices in the air fryer basket, ensuring they are not overcrowded.
- Cook at the highest possible temperature, between 350-400 degrees, for 8 minutes.
- Take out the basket and turn the chicken thighs over.
- Continue cooking at 350 degrees for an additional 6 minutes, checking the temperature and air frying until the internal temperature reaches 165 degrees.
- The chicken thighs should be crispy, with clear juices, and should reach an internal temperature of 165 degrees when measured with a digital thermometer in the thickest part.
