Ingredients
- 2 large boneless skinless chicken breasts
- 1/4 cup (60 ml) mayonnaise
- 2 cloves garlic minced
- 1 cup (240 ml) seasoned Panko bread crumbs
- 1/4 cup (60 ml) Parmesan cheese grated
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) pepper
- Olive oil spray
- Fresh parsley finely chopped, for garnish
Instructions
- Set the air fryer to a temperature of 390°F to preheat.
- Slice the chicken breasts horizontally to obtain four thin pieces. Place each piece between two sheets of plastic wrap and flatten it evenly using a meat mallet. Do this for all the chicken pieces.
- Mix the mayonnaise with the minced garlic in a small bowl. Coat each chicken piece thoroughly with this garlic mayo mixture.
- In another shallow dish, blend the Panko bread crumbs, grated Parmesan cheese, salt, and pepper. Press each chicken piece into the bread crumb mixture, ensuring both sides are well-covered. Repeat this for all the chicken pieces.
- Spray the air fryer basket lightly with olive oil. Avoid using PAM spray as it may harm some baskets.
- Arrange the chicken pieces in the basket without crowding. Cook for 8 minutes, then turn them over and continue cooking for an additional 5-7 minutes until they are crispy and golden.
- Take the chicken out and serve while hot, adding more Parmesan and chopped parsley on top for decoration.
