Ingredients

  • 2 large boneless skinless chicken breasts
  • 1/4 cup (60 ml) mayonnaise
  • 2 cloves garlic minced
  • 1 cup (240 ml) seasoned Panko bread crumbs
  • 1/4 cup (60 ml) Parmesan cheese grated
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) pepper
  • Olive oil spray
  • Fresh parsley finely chopped, for garnish


Instructions

  1. Set the air fryer to a temperature of 390°F to preheat.
  2. Slice the chicken breasts horizontally to obtain four thin pieces. Place each piece between two sheets of plastic wrap and flatten it evenly using a meat mallet. Do this for all the chicken pieces.
  3. Mix the mayonnaise with the minced garlic in a small bowl. Coat each chicken piece thoroughly with this garlic mayo mixture.
  4. In another shallow dish, blend the Panko bread crumbs, grated Parmesan cheese, salt, and pepper. Press each chicken piece into the bread crumb mixture, ensuring both sides are well-covered. Repeat this for all the chicken pieces.
  5. Spray the air fryer basket lightly with olive oil. Avoid using PAM spray as it may harm some baskets.
  6. Arrange the chicken pieces in the basket without crowding. Cook for 8 minutes, then turn them over and continue cooking for an additional 5-7 minutes until they are crispy and golden.
  7. Take the chicken out and serve while hot, adding more Parmesan and chopped parsley on top for decoration.
