Ingredients
- 2 boneless, skinless chicken breasts (6 oz / 170g each)
- 240ml pickle juice
- 120ml buttermilk (replace with plain yogurt)
- 120g all-purpose flour
- 5ml garlic powder
- 5ml paprika
- 5ml salt (adjust to taste)
- 25ml pepper (adjust to taste)
- 15ml powdered sweetener
- 5ml cayenne pepper (optional for the spicy chicken sandwich)
- 1 egg, beaten
- cooking oil (vegetable oil)
- 2 buns (brioche)
- 4 slices dill pickle chips
- 2 slices leaf lettuce (optional for deluxe sandwich)
- 4 slices fresh tomatoes (optional for deluxe sandwich)
- 60g mayo
- 30ml honey
- 10ml BBQ Sauce (hickory smoked)
- 10ml Dijon mustard
- 5ml yellow mustard
- 5ml xanthan gum (replace with cornstarch)
Instructions
- You have the option to use either a resealable bag or a sizable container for marinating the chicken. Place the chicken breasts into the chosen container or bag, then pour in the pickle juice and yogurt. Let this chill in the fridge for half an hour.
- In a large mixing bowl, combine the flour, paprika, garlic powder, salt, pepper, and sweetener by stirring them together.
- Crack the egg into another bowl that can fit the chicken for coating.
- Lightly coat the air fryer basket with vegetable oil.
- Take the chicken out of the marinade, and first coat each piece in the beaten egg, followed by the flour mixture. Lay the chicken pieces in the air fryer basket. (Using the egg is optional, but it helps the coating stay on. I sometimes skip the egg and it still works well.)
- From a distance, spray the top of the chicken with some vegetable oil.
- Cook in the air fryer at 400 degrees for 15 minutes.
- Open the air fryer and turn the chicken over carefully using tongs to avoid losing the coating. Your chicken might already be cooked through and might only need a couple of minutes to make this side crispy. Lightly spray this side of the chicken.
- Continue air frying for another 5-7 minutes until the chicken is nicely crisped. Check with a meat thermometer to ensure it has reached at least 165 degrees internally.
- Different air fryer brands and models vary, so watch your food carefully and adjust the time as needed.
- For the buns, toast them in the air fryer at 400 degrees for 3-4 minutes.
- Once done, remove the chicken from the air fryer and start putting together your sandwich.
- Mix together the mayo, honey, BBQ sauce, and both types of mustard in a bowl. (I sometimes skip the mayo and the taste is still great. Adjust the flavors to your liking.)
- In a separate bowl, combine the cornstarch with 2 teaspoons of the sauce, mix until it thickens, then add it back to the sauce bowl.
- Stir until the mixture thickens.
