Ingredients
- 4 chicken thighs or breasts
- 1 can of cream of mushroom soup
- 1 cup uncooked rice
- 2 cups chicken broth or water
- 1 onion, chopped
- Salt and pepper to taste
- Optional: garlic powder, parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a baking dish, mix the uncooked rice, chicken broth, and chopped onion.
- Place the chicken on top of the rice mixture and season with salt, pepper, and garlic powder if using.
- Pour the cream of mushroom soup over the chicken.
- Cover the dish with aluminum foil and bake for 1 hour.
- Remove the foil and bake for an additional 15-20 minutes until the chicken is cooked through and the rice is tender.
- Serve hot, garnished with parsley if desired.
Notes
Ensure chicken reaches an internal temperature of 165°F (75°C). For crispy skin, broil for a few minutes after baking.
