Description

A nostalgic and comforting dish combining chicken, rice, and creamy mushroom soup for a hearty meal.


Ingredients

  • 4 chicken thighs or breasts
  • 1 can of cream of mushroom soup
  • 1 cup uncooked rice
  • 2 cups chicken broth or water
  • 1 onion, chopped
  • Salt and pepper to taste
  • Optional: garlic powder, parsley for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, mix the uncooked rice, chicken broth, and chopped onion.
  3. Place the chicken on top of the rice mixture and season with salt, pepper, and garlic powder if using.
  4. Pour the cream of mushroom soup over the chicken.
  5. Cover the dish with aluminum foil and bake for 1 hour.
  6. Remove the foil and bake for an additional 15-20 minutes until the chicken is cooked through and the rice is tender.
  7. Serve hot, garnished with parsley if desired.

Notes

Ensure chicken reaches an internal temperature of 165°F (75°C). For crispy skin, broil for a few minutes after baking.
