Ingredients
- 2 cups cooked chicken, shredded
- 1 cup edamame, shelled
- 1 cup mixed vegetables (carrots, bell peppers, cucumbers)
- 2 cups lettuce, chopped
- 1/4 cup peanuts, chopped
- 2 tablespoons sesame oil
- 3 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
- In a large bowl, combine shredded chicken, edamame, mixed vegetables, and lettuce.
- In a separate small bowl, whisk together sesame oil, peanut butter, soy sauce, honey, rice vinegar, salt, and pepper to make the dressing.
