A vibrant and crunchy salad featuring shredded chicken, edamame, fresh vegetables, and a creamy peanut butter dressing.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup edamame, shelled
  • 1 cup mixed vegetables (carrots, bell peppers, cucumbers)
  • 2 cups lettuce, chopped
  • 1/4 cup peanuts, chopped
  • 2 tablespoons sesame oil
  • 3 tablespoons peanut butter

  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. In a large bowl, combine shredded chicken, edamame, mixed vegetables, and lettuce.
  2. In a separate small bowl, whisk together sesame oil, peanut butter, soy sauce, honey, rice vinegar, salt, and pepper to make the dressing.
  3. Pour the dressing over the salad ingredients and toss well to combine.
  4. Top with chopped peanuts and sesame seeds for garnish.
  5. Serve immediately or store in the refrigerator for meal prep.

Notes

Feel free to swap chicken for tofu or chickpeas for a vegetarian option. Add extra soy sauce, honey, or vinegar to adjust dressing flavor.
