Ingredients

  • 4 chicken breasts (680g)
  • 1/2 cup pickle juice (120ml)
  • 1/2 cup milk (120ml)
  • 1/3 cup mayonnaise (80ml)
  • 3 tablespoons (45 ml) smokey barbecue sauce
  • 3 tablespoons (45 ml) yellow mustard
  • 4 tablespoons (60 ml) honey
  • 1/2 teaspoon distilled white vinegar (2.5ml)
  • 1/2 teaspoon lemon juice (2.5ml)
  • 1 teaspoon (5 ml) sugar
  • 1/4 teaspoon (1 ml) garlic powder
  • 1/4 teaspoon (1 ml) onion powder
  • 1 1/2 cup all-purpose flour (180g)
  • 2 tablespoons (30 ml) powdered sugar
  • 2 teaspoons (10 ml) chili powder or more to taste
  • 1 1/2 teaspoon (8 ml) salt
  • 1 teaspoon (5 ml) garlic powder
  • 1-2 teaspoons (8 ml) cayenne pepper
  • 1/2 teaspoon (3 ml) onion powder
  • 1/2 teaspoon (3 ml) paprika
  • 1/2 teaspoon (3 ml) black pepper
  • 3/4 cup milk (180ml)
  • 1 large egg
  • 1 teaspoon (5 ml) salt
  • 2 teaspoons (10 ml) chili powder
  • 1 teaspoon (5 ml) garlic powder
  • 4 sandwich buns
  • vegetable oil for frying
  • vegetable oil, to toast buns
  • 4 slices Pepper Jack cheese
  • 16 dill pickle slices
  • 4 slices tomato
  • 4 slices green leaf lettuce


Instructions

  1. Flatten or slice the chicken breasts if they are too thick, ensuring they are slightly bigger than the sandwich buns.
  2. Combine the pickle juice and milk in a large bowl, then submerge the chicken in this mixture, allowing it to soak for a minimum of 30 minutes, or up to overnight.
  3. To create the sauce, mix the mayonnaise, barbecue sauce, yellow mustard, honey, vinegar, lemon juice, sugar, garlic powder, and onion powder until well blended, then set aside.
  4. For the coating mixtures, mix the flour, powdered sugar, chili powder, salt, garlic powder, cayenne pepper, onion powder, paprika, and black pepper for the dry mix. In a separate bowl, whisk together the milk, egg, salt, chili powder, and garlic powder for the wet mix.
  5. Heat vegetable oil in a deep pan for frying.
  6. While waiting for the oil to heat, coat the chicken by first dipping it into the wet mixture, allowing excess to drip off, then covering it with the dry mixture. Repeat this process, dipping again in the wet and dry mixtures for a second coat. Do this for all chicken pieces.
  7. Once the oil is hot, fry the chicken breasts until they are a deep golden brown on each side, then remove them from the oil and place a slice of cheese on top.
  8. Spread some vegetable oil on the insides of the buns and toast them on a pan or griddle until they are golden and crispy at the edges.
  9. Spread the prepared sauce on both the top and bottom of the buns, then layer with pickles, tomatoes, lettuce, and the cooked chicken with cheese. Enjoy your meal!
