Description

A traditional Filipino dish featuring marinated chicken in a savory-sour sauce made from soy sauce and vinegar, perfect for family gatherings.


Ingredients

  • 2 lbs chicken, cut into pieces
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1/2 teaspoon black peppercorns
  • 1 tablespoon vegetable oil
  • 1 cup water
  • Salt to taste


Instructions

  1. Marinate chicken in soy sauce, vinegar, garlic, and bay leaves for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Add the onions and sauté until translucent.
  3. Add the marinated chicken and cook until browned.
  4. Pour in the water, add peppercorns, and bring to a simmer.
  5. Cover and let it cook for about 30 minutes or until chicken is tender.
  6. Remove the lid and let the sauce reduce to your desired consistency.
  7. Serve hot with rice.

Notes

For deeper flavor, marinate the chicken overnight. Serve with steamed rice and garnish with fresh herbs.
