A traditional Filipino dish featuring marinated chicken in a savory-sour sauce made from soy sauce and vinegar, perfect for family gatherings.
Ingredients
- 2 lbs chicken, cut into pieces
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 bay leaves
- 1/2 teaspoon black peppercorns
- 1 tablespoon vegetable oil
- 1 cup water
- Salt to taste
Instructions
- Marinate chicken in soy sauce, vinegar, garlic, and bay leaves for at least 30 minutes.
- Heat oil in a large pot over medium heat. Add the onions and sauté until translucent.
- Add the marinated chicken and cook until browned.
- Pour in the water, add peppercorns, and bring to a simmer.
- Cover and let it cook for about 30 minutes or until chicken is tender.
- Remove the lid and let the sauce reduce to your desired consistency.
- Serve hot with rice.
Notes
For deeper flavor, marinate the chicken overnight. Serve with steamed rice and garnish with fresh herbs.
