Ingredients
- 2 tablespoons olive oil (30 ml)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound boneless, skinless chicken breasts, cubed (450 g)
- 2 teaspoons ground cumin (10 g)
- 1 teaspoon chili powder (5 g)
- 1/2 teaspoon paprika (2.5 g)
- 1/2 teaspoon dried oregano (2.5 g)
- 1/4 teaspoon cayenne pepper, optional (1.25 g)
- Salt and pepper to taste
- 2 cans Great Northern beans, drained and rinsed (425 g each)
- 1 can corn, drained (425 g)
- 2 cups chicken broth (480 ml)
- 1 can diced green chilies (113 g)
- 1/4 cup sour cream (60 ml)
- 1/4 cup coconut cream (60 ml)
- Fresh cilantro, chopped, for garnish
- Lime wedges, for serving
- Shredded cheese, for topping
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another 1 minute.
- Add the cubed chicken breasts to the pot.
- Cook the chicken until browned on all sides, about 5-7 minutes.
- Stir in the ground cumin, chili powder, paprika, oregano, cayenne pepper, salt, and pepper.
- Cook for 1 minute, allowing the spices to become fragrant.
- Add the drained and rinsed Great Northern beans to the pot.
- Stir in the drained corn and chicken broth.
- Add the can of diced green chilies and mix well.
- Bring the mixture to a boil, then reduce the heat to low.
- Simmer the chili for 20-25 minutes, allowing the flavors to meld.
- Stir in the sour cream and heavy cream until fully incorporated.
- Cook for an additional 5 minutes, stirring occasionally.
- Remove from heat and ladle the chili into bowls.
- Garnish with chopped fresh cilantro and shredded cheese.
- Serve with lime wedges on the side.
