Description

A comforting white chicken chili filled with tender chicken, robust beans, and zesty spices, perfect for gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup heavy cream or sour cream
  • 1/2 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)


Instructions

  1. In a large pot or slow cooker, combine the cooked chicken, white beans, corn, chicken broth, onion, garlic, bell pepper, cumin, chili powder, salt, and pepper.
  2. If using a slow cooker, cover and cook on low for 6-8 hours or high for 3-4 hours. For stovetop, bring to a simmer and cook for about 30 minutes.
  3. Stir in the heavy cream or sour cream, and let it heat through. Adjust seasoning if needed.
  4. Serve hot, garnished with shredded cheese and cilantro if desired.

Notes

For a vegan alternative, substitute cooked chickpeas for chicken and use coconut milk instead of cream.
