A comforting white chicken chili filled with tender chicken, robust beans, and zesty spices, perfect for gatherings.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup heavy cream or sour cream
- 1/2 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- In a large pot or slow cooker, combine the cooked chicken, white beans, corn, chicken broth, onion, garlic, bell pepper, cumin, chili powder, salt, and pepper.
- If using a slow cooker, cover and cook on low for 6-8 hours or high for 3-4 hours. For stovetop, bring to a simmer and cook for about 30 minutes.
- Stir in the heavy cream or sour cream, and let it heat through. Adjust seasoning if needed.
- Serve hot, garnished with shredded cheese and cilantro if desired.
Notes
For a vegan alternative, substitute cooked chickpeas for chicken and use coconut milk instead of cream.
