Ingredients
- 2 tablespoons (30 ml) vegetable oil
- 5 pounds (680 g) boneless skinless chicken breasts (about 3 medium-sized chicken breasts)
- 1 cup (240 ml) unseasoned breadcrumbs
- 3 tablespoons (45 ml) homemade ranch seasoning mix (can substitute 1 packet of store-bought ranch seasoning mix)
- 2 large eggs
- 3/4 cup (180 ml) hot sauce (reduce the amount for less spice)
- 2 tablespoons (30 ml) salted butter
Instructions
- Start by setting your oven to 400°F and lightly coating a baking tray with vegetable oil; put it aside for later.
- Prepare the chicken by flattening the breasts to a uniform thickness of about half an inch using a meat mallet, then slice them into eight pieces. Season with salt and pepper and keep them aside for now.
- In a shallow bowl, beat the eggs until smooth. In a separate bowl, mix together the breadcrumbs and ranch seasoning.
- Arrange your workspace with the chicken, the egg mixture, and the breadcrumb blend in sequence.
- Coat each chicken strip in the egg, then cover it with the breadcrumb mixture, shaking off any surplus breadcrumbs before placing it on the oiled baking tray. Repeat for all chicken pieces.
- Bake the chicken for a total of 20 minutes, turning them over midway through the cooking time.
- As the chicken is nearing completion, with about five minutes left, prepare the Buffalo sauce by combining hot sauce in a large bowl and whisking in melted butter.
- Once the chicken is cooked, individually coat each piece with the sauce mixture using tongs, placing them on a serving plate afterward. Dispose of any extra sauce.
- Serve immediately with blue cheese or ranch for dipping.
