Ingredients

  • – 2 lbs (900 g) boneless, skinless chicken breast, about 3-4 chicken breasts
  • – 1 tbsp (15 ml) taco or fajita seasoning, use this homemade fajita seasoning for gluten free option
  • – 1 1/2 sweet bell peppers, sliced (any combination or green, red, orange, yellow)
  • – 1 medium sweet yellow onion, sliced
  • – 8 oz (225 g) sharp cheddar cheese, shredded
  • – 1 tbsp (15 ml) chopped cilantro for garnish, optional

Instructions

  1. Turn on the oven and set it to 375ËšF.
  2. Place the chicken breasts side by side in a baking dish, ensuring they are not touching each other, and evenly distribute the fajita seasoning over them.
  3. Combine the sliced bell peppers and onion, then layer them uniformly over the chicken. Spread the shredded cheddar cheese on top of the vegetables.
  4. Cook on the oven’s middle shelf for 30-40 minutes, or until the chicken reaches a minimum internal temperature of 165ËšF.
  5. Finish by sprinkling chopped cilantro on top, if desired, and serve warm with rice, cauliflower rice, greens, or wrapped in tortillas.

Notes

  • Add a touch of heat by mixing cayenne pepper or red pepper flakes into the fajita seasoning before sprinkling on the chicken.
  • Enhance the flavor with a mix of cheeses like Monterey Jack, Colby, or Pepper Jack for a tasty twist.
  • For a crispy texture, top the dish with crushed tortilla chips or crispy tortilla strips before serving.
