Ingredients
- – 2 lbs (900 g) boneless, skinless chicken breast, about 3-4 chicken breasts

- – 1 1/2 sweet bell peppers, sliced (any combination or green, red, orange, yellow)
- – 1 medium sweet yellow onion, sliced
- – 8 oz (225 g) sharp cheddar cheese, shredded
- – 1 tbsp (15 ml) chopped cilantro for garnish, optional
Instructions
- Turn on the oven and set it to 375ËšF.
- Place the chicken breasts side by side in a baking dish, ensuring they are not touching each other, and evenly distribute the fajita seasoning over them.
- Combine the sliced bell peppers and onion, then layer them uniformly over the chicken. Spread the shredded cheddar cheese on top of the vegetables.
- Cook on the oven’s middle shelf for 30-40 minutes, or until the chicken reaches a minimum internal temperature of 165ËšF.
