  • 8 skin-on chicken drumsticks (approximately 2 pounds total weight)
  • 3 tablespoons olive oil
  • 1 tablespoon sea salt (reduce to 1 teaspoon if salt is a concern)
  • ½ teaspoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked or sweet paprika
  • 1 tablespoon dry mustard (optional)


Instructions

  1. Preheat your oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper.
  2. In a small mixing bowl, combine the garlic powder, onion powder, smoked or sweet paprika, salt, and black pepper.
  3. Blend the spices thoroughly using a fork until they are evenly mixed.
  4. Add olive oil to the spice mixture and blend well to create a flavorful oil.
  5. Let the chicken legs sit until they reach room temperature.
  6. Coat the chicken legs with the seasoning oil mixture, ensuring the entire drumstick is covered.
  7. Arrange the chicken legs in a single layer on the prepared baking sheet, leaving space between them.
  8. Bake for 30 minutes on the middle rack of your oven.
  9. After 30 minutes, brush the legs with the oil that has gathered on the tray and bake for an additional 5-10 minutes until crispy.
  10. Check that the internal temperature reaches at least 165 degrees F before serving.
