Ingredients
- 1.5 lbs chicken breasts, diced
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup sour cream
- 1 cup chicken broth
- 2 cups egg noodles or rice
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the mushrooms and continue to sauté until soft.
- In a baking dish, combine the diced chicken, sautéed vegetables, sour cream, chicken broth, salt, and pepper. Mix well.
- Bake in the preheated oven for 25-30 minutes, until the chicken is cooked through.
- Serve over cooked egg noodles or rice, and garnish with fresh parsley if desired.
