Description

Delicious baked taquitos filled with creamy cheese and shredded chicken, perfect for any weeknight dinner or game night.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup salsa
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 10 small flour or corn tortillas
  • Cooking spray or olive oil for brushing


Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the shredded chicken, softened cream cheese, shredded cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper until creamy and well combined.
  3. Take each tortilla and place 2–3 tablespoons of the filling onto it. Roll it tightly, ensuring the seam faces down on the prepared baking sheet.
  4. Lightly brush or spray the tops of the taquitos with olive oil or cooking spray.
  5. Bake the taquitos for 15–18 minutes until golden and crispy.

Notes

Experiment with different cheeses for added flavor or use rotisserie chicken for a quicker option. Serve with guacamole or sour cream.
