Ingredients
- – 6 cups (1440 ml) (1.4 liters) cornflakes (use gluten free, if needed)
- – 1/4 cup (60g) grated Parmesan cheese
- – 1 teaspoon (5 ml) smoked paprika
- – 1/2 teaspoon (3 ml) onion powder
- – 1/2 teaspoon (3 ml) garlic powder
- – 2 large eggs, beaten
- – 2 tablespoons (30ml) hot sauce
- – 2 pounds (900g) chicken breast tenderloins
- – vegetable oil, for drizzling
- – fresh thyme or parsley, for serving
- – 1/3 cup (80ml) maple syrup
- – 1/4 cup (60g) Dijon mustard
- – 2-3 tablespoons (30-45ml) hot sauce
- – 3/4 teaspoon (4 ml) chipotle chili powder
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/2 teaspoon (3 ml) onion powder
- – 1 tablespoon (15 ml) fresh thyme
- – sea salt
Instructions
- Set your oven to 425° F and prepare a baking tray with parchment paper.
- Blend cornflakes, Parmesan, smoked paprika, onion powder, garlic powder, and a little salt in a food processor until they form fine crumbs, or crush them in a plastic bag using your foot. Transfer to a shallow dish.
- Whisk the eggs in a separate bowl, add the chicken pieces, and ensure they are completely coated.
- Coat the chicken evenly with the crumb mixture, ensuring full coverage. Place on the baking tray. For a thicker layer, repeat the process of dipping in eggs and coating with crumbs. Arrange on the baking tray and drizzle with vegetable oil. Cook for 20-25 minutes until they become crispy.
- For the sauce, heat maple syrup, Dijon mustard, hot sauce, chipotle chili powder, onion powder, garlic powder, and a bit of salt in a saucepan. Mix in the fresh thyme.
- Pour the heated sauce over the baked chicken and sprinkle with herbs. If the sauce becomes too thick, microwave for a few seconds. Enjoy your meal!
