Ingredients
- 6-8 bone-in chicken pieces, about 2 lbs (900g), I used drumsticks and thighs
- 1 lb (450g) baby yellow potatoes or 4 large yellow potatoes, cubed
- 4 shallots
- 1 1/2 tsp (8 ml) paprika
- 1 tsp (5 ml) Italian seasoning
- 1/2 tsp (3 ml) salt
- 1/2 tsp (3 ml) black pepper
- 3 tbsp (45ml) olive oil
- Fresh thyme or rosemary, to top
- 1/4 cup (60ml) dijon mustard
- 1/4 cup (60ml) vegetable broth
- 2 tbsp (30ml) honey
- 1/4 tsp (1 ml) paprika
- Salt & pepper
Instructions
- Set your oven to 375°F to begin.
- Cut the shallots lengthwise and place them with the yellow potatoes in a large oven-proof skillet, braiser, or baking dish. If you have larger potatoes, ensure they are cubed for uniform cooking.
- Mix the vegetables with 1 tablespoon of olive oil and a dash of salt.
- Arrange the chicken pieces over the vegetables and pour 2 tablespoons of olive oil over them.
- In a small bowl, blend together the paprika, salt, pepper, and Italian seasoning, and rub this spice mixture evenly over the chicken.
- For the honey dijon sauce, whisk the mustard, honey, vegetable broth, paprika, salt, and pepper in a small bowl, then pour this over both the chicken and vegetables. Before baking, scatter some fresh thyme or rosemary in the pan.
- Cover the dish and place it in the oven to bake for 1 hour. Once done, take it out and uncover it. Baste the chicken with some of the sauce.
- Increase the oven setting to 400°F and continue baking for an additional 30-35 minutes.
- Sprinkle with more thyme or rosemary before serving.
