Ingredients
- 10 dark meat chicken pieces (drumsticks and thighs recommended)
- 2 tsp kosher salt
- 1 tbsp smoked paprika
- 1 tbsp Montreal chicken seasoning blend (or any chicken seasoning of choice)
- 2 tbsp butter
- 1/2 cup red onion (minced)
- 1/2 cup flat leaf parsley (chopped)
- 1 tbsp garlic (minced)
- 1/2 tsp red pepper flakes
- 1 cup chicken stock
- 1 tbsp fresh lemon juice
- 1 cup freshly grated Parmesan cheese
- 1/3 cup heavy whipping cream
Instructions
- Start by melting the butter in a skillet over medium heat.
- Add the minced red onion and sauté until it becomes fragrant, about 2 minutes.
- Introduce the chopped parsley and minced garlic to the skillet. Stir to combine all the ingredients, then add the fresh lemon juice, followed by red pepper flakes.
- Pour in the chicken stock and add the Parmesan cheese. Mix well and then stir in the heavy cream.
- Bring the sauce to a simmer for about a minute, allowing the flavors to meld. Once ready, turn off the heat and let the sauce cool slightly.
- While the sauce cools, season the chicken with kosher salt, smoked paprika, and your choice of chicken seasoning. Toss well to ensure even flavor.
- Pour the sauce over the seasoned chicken in a baking dish.
- Bake uncovered for 105 minutes at 375°F, flipping the chicken halfway through for even cooking.
- Finally, broil the chicken on the skin side until golden brown. Baste in sauce to finish off this delicious dish.
