Ingredients

  • 10 dark meat chicken pieces (drumsticks and thighs recommended)
  • 2 tsp kosher salt
  • 1 tbsp smoked paprika
  • 1 tbsp Montreal chicken seasoning blend (or any chicken seasoning of choice)
  • 2 tbsp butter
  • 1/2 cup red onion (minced)
  • 1/2 cup flat leaf parsley (chopped)
  • 1 tbsp garlic (minced)
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream


Instructions

  1. Start by melting the butter in a skillet over medium heat.
  2. Add the minced red onion and sauté until it becomes fragrant, about 2 minutes.
  3. Introduce the chopped parsley and minced garlic to the skillet. Stir to combine all the ingredients, then add the fresh lemon juice, followed by red pepper flakes.
  4. Pour in the chicken stock and add the Parmesan cheese. Mix well and then stir in the heavy cream.
  5. Bring the sauce to a simmer for about a minute, allowing the flavors to meld. Once ready, turn off the heat and let the sauce cool slightly.
  6. While the sauce cools, season the chicken with kosher salt, smoked paprika, and your choice of chicken seasoning. Toss well to ensure even flavor.
  7. Pour the sauce over the seasoned chicken in a baking dish.
  8. Bake uncovered for 105 minutes at 375°F, flipping the chicken halfway through for even cooking.
