Description

A delicious and healthy one-pot meal featuring juicy chicken thighs marinated with Mediterranean spices and baked with fresh vegetables.


Ingredients

  • 8 chicken thighs (bone-in, skin and excess fat removed)
  • 1 onion (thinly sliced)
  • 1 ripe tomato (skin removed and grated)
  • 2–3 tablespoons of extra virgin olive oil
  • 1 lemon (juice)
  • 2 sprigs of fresh rosemary (optional)
  • 5 garlic cloves (minced)
  • 1 teaspoon of oregano
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of cumin
  • 1 teaspoon of onion powder
  • ½ teaspoon of white pepper
  • Salt (to taste)


Instructions

  1. Make the Marinade: In a bowl, combine the lemon juice, olive oil, minced garlic, oregano, smoked paprika, cumin, onion powder, and white pepper. Mix well to form a marinade, and season with salt to taste.
  2. Add Chicken: Place the chicken thighs in the bowl with the marinade. Make sure to coat each piece thoroughly. Let it marinate for at least 30 minutes, but feel free to marinate it longer for enhanced flavors.
  3. Bake: Transfer the marinated chicken to a baking dish. Arrange the sliced onions and grated tomato around the chicken. If using, tuck in the sprigs of rosemary for added aroma. Bake in the preheated oven for 35–45 minutes, or until the chicken reaches an internal temperature of 165°F and the skin is golden brown.
  4. Serve: Let the chicken rest for a few minutes after baking, allowing the juices to redistribute. Serve warm, and enjoy the delightful flavors.

Notes

Marinate the chicken overnight for deeper flavor. Adjust the spices according to your preference and add red pepper flakes for heat.
