Ingredients
- 4 chicken breasts
- 1 cup heavy cream
- 1/2 cup sundried tomatoes, chopped
- 1 cup spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add sundried tomatoes and spinach, cooking until the spinach is wilted.
- Stir in the heavy cream, bringing it to a simmer. Season with salt and pepper.
- Place chicken breasts in a baking dish and pour the creamy sauce over them.
- Top with mozzarella cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
- Garnish with fresh basil before serving. Enjoy over pasta!

For a lighter version, consider substituting Greek yogurt for heavy cream or adding additional vegetables like bell peppers or zucchini.
