Description

A comforting casserole featuring tender chicken breasts in a creamy sauce, layered with sun-dried tomatoes and fresh spinach, topped with bubbling mozzarella cheese.


Ingredients

  • 2 large chicken breasts, halved horizontally
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tbsp oil from the sun-dried tomato jar
  • 1 1/2 cups fresh spinach, roughly chopped


Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a greased baking dish.
  2. Slice each chicken breast in half horizontally and season generously with salt, pepper, and garlic powder.
  3. Blend the cream cheese and heavy cream in a bowl until smooth.
  4. Add onion powder, paprika, Italian seasoning, Parmesan cheese, and half of the mozzarella cheese to the bowl and stir until combined.
  5. Pour this mixture over the chicken breasts and drizzle with sun-dried tomato oil.
  6. Sprinkle sun-dried tomatoes over the dish and cover with foil.
  7. Bake for 20 minutes, then remove foil and add spinach and remaining mozzarella cheese.
  8. Return to the oven for an additional 10 minutes until cheese is melted and bubbly.

Notes

For added flavor, marinate the chicken before cooking or add crushed red pepper flakes to the sauce for a spicy kick.
