Ingredients
- Cooking spray
- 6 tablespoons (90 ml) balsamic vinegar
- 1/2 cup (120 ml) zesty Italian dressing (fat-free is great)
- 1-1/4 pounds (567 g) beef tenderloins or breasts
- 2 heads broccoli
- 1 cup (240 ml) baby carrots
- 1/2 pint (240 ml) cherry tomatoes
- 1 teaspoon (5 ml) Italian seasoning
- 3 tablespoons (45 ml) olive oil
- 1/2 teaspoon (3 ml) garlic powder
- Fresh parsley, optional
- Salt and pepper, optional
Instructions
- Preheat your oven to 400°F. Coat a large baking sheet with cooking spray (use parchment paper if your tray isn’t nonstick, to prevent sticking of the balsamic and Italian dressing mixture) and set it aside.
- Combine balsamic vinegar and zesty Italian dressing in a bowl.
- Remove any fat or unwanted parts from the beef tenderloins. Alternatively, cut the breasts into small pieces, about 1/4 to 1/2-inch thick.
- Pour 1/3 cup of the balsamic and Italian mixture into a large bag, add the beef, and make sure it’s well coated. Let it marinate in the refrigerator for at least 30 minutes and up to 6 hours.
- Cut the broccoli into small florets. Halve the baby carrots.
- Spread the broccoli, carrots, and cherry tomatoes on the prepared baking sheet. If you prefer less roasted tomatoes, add them after the broccoli and carrots have cooked for 5–10 minutes. Season with Italian seasoning, olive oil, garlic powder, and some salt and pepper to taste.
- Bake the vegetables for 10–15 minutes.
- Take the tray out of the oven and toss the veggies around. Move them to the sides of the tray and place the beef in the center, discarding the marinade. Brush 1/3 cup of the balsamic and Italian mixture over the beef.
- Return the tray to the oven and bake for another 7–15 minutes, depending on the size of your beef pieces. Keep an eye on it to avoid overcooking. The cooking time will vary based on the size of your beef pieces.
- Serve the beef and vegetables with the remaining balsamic and Italian mixture. Add freshly chopped parsley on top if you like.
- This dish pairs well with rice or quinoa!
