Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 cups mixed veggies (broccoli, bell peppers, carrots)
  • 2 cups rice (white, brown, or cauliflower)
  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 tablespoon lime juice
  • Salt and pepper to taste


Instructions

  1. Cook rice according to package instructions.
  2. Cut chicken into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Sauté chicken for 6-8 minutes until golden brown and cooked through (internal temperature 165°F).
  5. In a small bowl, mix mayonnaise, sriracha, honey, garlic powder, and lime juice to prepare the sauce.
  6. Add mixed veggies to the skillet and cook for 2-3 minutes until just tender.
  7. Serve chicken and veggies over rice and drizzle with sauce before serving.

Notes

Don’t overcrowd the skillet to ensure even cooking of the chicken. Customize the sauce to your taste, adding soy sauce or sesame seeds if desired.
