A flavorful and comforting bowl featuring tender chicken, a smooth sauce, and perfectly cooked rice or noodles, ideal for family dinners.


Ingredients

  • 3-4 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 1/2 cup chili sauce
  • 1/2 cup mayonnaise (use light for a healthier option)
  • 4 green onions, finely chopped
  • 3 cups cooked rice or noodles
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey (or agave syrup for vegan)
  • Juice of 1 lime (freshly squeezed)


Instructions

  1. Chop the chicken into bite-sized pieces and mince the garlic.
  2. Heat 1 tablespoon oil in a skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 7-10 minutes.
  3. In a separate bowl, mix together mayonnaise, chili sauce, soy sauce, honey, and lime juice until smooth.
  4. Reduce the heat to low, pour the sauce over the cooked chicken, and stir well to coat evenly. Simmer for 2-3 minutes.
  5. Serve the mixture over rice or noodles, and garnish with green onions.

Notes

Experiment with sauce ratios and consider adding red pepper flakes or sriracha for extra heat. Serve with lime wedges for added freshness.
