Description

A vibrant dish featuring crispy chicken, fluffy rice, and crunchy veggies drizzled with a zesty Bang Bang sauce, perfect for family dinners or cozy evenings.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 2 tbsp sriracha sauce
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • ½ cup sliced cucumbers
  • ½ cup shredded carrots
  • Salt and pepper, to taste
  • Oil for frying


Instructions

  1. Season the chicken pieces with salt and pepper in a large bowl.
  2. Dredge each chicken piece in the all-purpose flour.
  3. Dip the floured pieces into the beaten eggs.
  4. Coat the chicken pieces with panko breadcrumbs.
  5. Heat oil in a frying pan over medium heat and fry the chicken until golden brown (about 4-6 minutes per batch).
  6. Drain the chicken on paper towels.
  7. Mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
  8. In serving bowls, layer cooked rice, shredded lettuce, sliced cucumbers, shredded carrots, and crispy chicken, then drizzle the Bang Bang sauce over the top.
  9. Serve warm and enjoy!

Notes

For added flavor, you can marinate the chicken in sweet chili sauce before cooking. Adjust the spiciness of the sauce as per your preference.
