Description

A vibrant chicken salad topped with a creamy, spicy Bang Bang sauce and crunchy peanuts, perfect for any weeknight dinner.


Ingredients

  • 2 cooked chicken breasts, shredded
  • 6 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 red bell pepper, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup peanuts, chopped
  • 1/2 cup Bang Bang sauce (mayonnaise, sweet chili sauce, and sriracha mixed to taste)


Instructions

  1. In a large bowl, combine the cooked chicken, salad greens, cucumber, bell pepper, red onion, and cherry tomatoes.
  2. Drizzle with Bang Bang sauce and toss to coat evenly.
  3. Sprinkle chopped peanuts on top.

Notes
