Ingredients
- 500 g (1.1 lbs) chicken breast
- 1/4 cup (60 ml) basil pesto
- 1 small red onion, finely sliced
- 1 large tomato, diced
- 2 cup (480 ml) s shredded mozzarella
- 1/4 cup (60 ml) grated Parmesan
- 4 medium tortillas
Instructions
- Set your oven to 230°C (450°F) to preheat.
- Arrange the chicken breasts on a baking sheet, season with salt and pepper, and bake for 20 minutes.
- Allow the chicken to cool slightly, then use two forks to tear it into shreds, anchoring with one fork while using the other to pull the meat apart.
- To prepare the quesadillas, spread a tablespoon of pesto on one side of each tortilla, then layer with shredded chicken, sliced onion, diced tomato, mozzarella, and Parmesan.
- Fold the tortilla over the toppings, pressing down with a spatula to maintain its shape, and place it in a skillet over medium-low heat.
- Cook for 2-3 minutes, flip, press down again, and continue cooking for another 2 minutes until the cheese is melted thoroughly.
- Cut each quesadilla into thirds, serve, and enjoy!
