Ingredients

  • 500 g (1.1 lbs) chicken breast
  • 1/4 cup (60 ml) basil pesto
  • 1 small red onion, finely sliced
  • 1 large tomato, diced
  • 2 cup (480 ml) s shredded mozzarella
  • 1/4 cup (60 ml) grated Parmesan
  • 4 medium tortillas


Instructions

  1. Set your oven to 230°C (450°F) to preheat.
  2. Arrange the chicken breasts on a baking sheet, season with salt and pepper, and bake for 20 minutes.
  3. Allow the chicken to cool slightly, then use two forks to tear it into shreds, anchoring with one fork while using the other to pull the meat apart.
  4. To prepare the quesadillas, spread a tablespoon of pesto on one side of each tortilla, then layer with shredded chicken, sliced onion, diced tomato, mozzarella, and Parmesan.
  5. Fold the tortilla over the toppings, pressing down with a spatula to maintain its shape, and place it in a skillet over medium-low heat.
  6. Cook for 2-3 minutes, flip, press down again, and continue cooking for another 2 minutes until the cheese is melted thoroughly.
