Description

A delightful blend of savory BBQ chicken, grilled pineapple, and gooey Monterey Jack cheese layered on crispy tortilla chips, perfect for gatherings or family dinners.

Ingredients

  • 1/2 pineapple, peeled, cored, and sliced
  • Oil for grilling
  • 1 (14 ounce) bag of tortilla chips
  • 2 cups cooked and shredded chicken
  • 1/2 cup BBQ sauce
  • 1/2 cup red onion, sliced or diced
  • 1/2 cup candied jalapenos
  • 2 cups Monterey Jack cheese, shredded

Instructions

  1. Heat your grill to medium-high heat and lightly oil the grates.
  2. Grill the pineapple slices for about 2-3 minutes per side or until slightly charred.
  3. In an oven-safe pan or dish, layer the tortilla chips evenly across the bottom.
  4. Top the chips with grilled pineapple, followed by the shredded chicken coated with BBQ sauce.
  5. Sprinkle sliced red onion and candied jalapenos over the chicken.
  6. Generously cover the entire dish with shredded Monterey Jack cheese.
  7. Bake in a preheated oven at 350°F (180°C) for about 5-10 minutes, or until the cheese melts.

Notes

For a healthier option, consider using baked tortilla chips or whole grain varieties. Fresh ingredients enhance flavor.
