BBQ chicken bowls combine savory chicken with roasted sweet potatoes and fresh coleslaw, topped with zesty pickles, creating a satisfying meal.
Ingredients
- 2 Chicken breasts
- 1/2 cup BBQ sauce
- 2 Sweet potatoes
- 2 cups Cabbage (shredded, for coleslaw)
- 1 cup Carrots (shredded, for coleslaw)
- 1/2 cup Mayonnaise (for coleslaw)
- 2 tbsp Vinegar (for coleslaw)
- Pickles (for topping)
- Salt (to taste)
- Pepper (to taste)
- 2 tbsp Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Cut sweet potatoes into cubes, toss with olive oil, salt, and pepper, and roast in the oven for 20-25 minutes until tender.
- Meanwhile, cook chicken breasts in a skillet over medium heat until cooked through, about 6-7 minutes per side. Brush with BBQ sauce during the last few minutes of cooking.
- For the coleslaw, shred cabbage and carrots, mix with mayonnaise, vinegar, salt, and pepper to taste.
- Assemble the bowls by layering sweet potatoes, sliced BBQ chicken, coleslaw, and top with zesty pickles. Serve and enjoy!
Notes
Try adding smoked paprika or garlic powder to the sweet potatoes for extra flavor. Adjust coleslaw ingredients according to your taste.
