Description

A crowd-pleasing dip with robust flavors from barbecue sauce, tender chicken, and creamy cheese, perfect for gatherings and game nights.


Ingredients

  • 1 tablespoon oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 cup chicken, cooked and shredded or diced
  • 1/3 cup sliced pickled hot peppers, drained
  • 4 ounces cream cheese, warmed
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup BBQ sauce
  • 1 1/2 cups cheddar cheese, shredded


Instructions

  1. Heat the oil in a skillet over medium heat. Add the diced onion and bell pepper and cook them until tender, approximately five minutes.
  2. In a mixing bowl, combine the sautéed onion and bell pepper, shredded chicken, drained pickled hot peppers, warmed cream cheese, sour cream, mayonnaise, half of the BBQ sauce, and half of the cheddar cheese. Mix until thoroughly combined.
  3. Spread the mixture evenly over the bottom of a baking dish.
  4. Drizzle the remaining BBQ sauce over the top and sprinkle on the remaining shredded cheese.
  5. Bake in a preheated 350°F (180°C) oven for 20-30 minutes, or until the cheese has melted and the sides are bubbling.
  6. Alternatively, for a slow-cooked option, place the mixture in a slow cooker and cook on high for 1-2 hours or on low for 2-4 hours until the cheese melts beautifully.

Notes

For added spice, adjust the amount of pickled hot peppers or BBQ sauce. Serve warm with dippers like tortilla chips or veggie sticks.
