Description

A delightful one-pan meal combining the bold flavors of barbecue sauce with comforting fried rice, perfect for busy weeknights or family gatherings.


Ingredients

  • 2 cups cooked rice
  • 1 lb chicken breast, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons barbecue sauce
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste


Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the diced chicken breast and cook until browned and cooked through.
  3. Push the chicken to one side of the skillet and add mixed vegetables. Cook until they are tender.
  4. Push everything to one side and pour beaten eggs into the pan. Scramble until fully cooked, then mix together with the chicken and veggies.
  5. Add the cooked rice, barbecue sauce, soy sauce, and green onions. Stir well and cook for an additional few minutes until everything is heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot.
