Ingredients
- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 tablespoons barbecue sauce
- 2 tablespoons soy sauce
- 2 eggs, beaten
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add the diced chicken breast and cook until browned and cooked through.
- Push the chicken to one side of the skillet and add mixed vegetables. Cook until they are tender.
- Push everything to one side and pour beaten eggs into the pan. Scramble until fully cooked, then mix together with the chicken and veggies.
- Add the cooked rice, barbecue sauce, soy sauce, and green onions. Stir well and cook for an additional few minutes until everything is heated through.
- Season with salt and pepper to taste.
- Serve hot.

For best results, use day-old rice and let it come to room temperature before cooking. Adjust the barbecue sauce to taste, ensuring it complements the dish without overpowering it.
