Ingredients
- 8 tortillas (190g), I like Mission gluten free tortillas
- 3 cups (710ml) cooked then shredded chicken breast, ~1lb (454g) pre-cooked weight
- 8 oz (227g) shredded sharp cheddar cheese
- Barbecue sauce
Instructions
- Combine the shredded chicken with your preferred amount of barbecue sauce in a bowl, then leave it aside.
- Warm up a large frying pan over medium heat and coat it with nonstick spray. Lay one tortilla flat in the pan, then evenly spread a light layer of shredded cheddar on top. Place a quarter of the barbecue chicken mixture over the cheese, and cover it with another light layer of cheddar. Top with another tortilla. Cook until the bottom tortilla turns a golden brown, then flip it to brown the other side. Gently move the quesadilla to a cooling rack to cool slightly as you continue cooking the remaining quesadillas with the rest of the ingredients.
- Cut the quesadillas into slices using a pizza cutter and serve them with additional barbecue sauce on the side for dipping.
