A delicious BBQ chicken sweet potato bowl combines smoky barbecue chicken with roasted sweet potatoes for a comforting and satisfying meal.
Ingredients
- 2 chicken breasts
- 1 cup barbecue sauce
- 2 medium sweet potatoes
- 1 avocado, diced
- 1 cup corn (canned or frozen)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
- While the sweet potatoes are roasting, cook the chicken breasts by grilling or pan-frying them over medium heat until cooked through. Brush with barbecue sauce during the last few minutes of cooking.
- Once the chicken is cooked, slice it.
- In bowls, layer the roasted sweet potatoes, sliced chicken, diced avocado, and corn. Drizzle additional barbecue sauce if desired and garnish with fresh herbs.
