Description

A delicious BBQ chicken sweet potato bowl combines smoky barbecue chicken with roasted sweet potatoes for a comforting and satisfying meal.


Ingredients

  • 2 chicken breasts
  • 1 cup barbecue sauce
  • 2 medium sweet potatoes
  • 1 avocado, diced
  • 1 cup corn (canned or frozen)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
  3. While the sweet potatoes are roasting, cook the chicken breasts by grilling or pan-frying them over medium heat until cooked through. Brush with barbecue sauce during the last few minutes of cooking.
