Description

A comforting and hearty Beef Enchilada Casserole layered with seasoned beef, black beans, cheese, and enchilada sauce, perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) red enchilada sauce
  • 8 corn tortillas
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, sliced jalapeños


Instructions

  1. Cook the ground beef and diced onion in a large skillet over medium heat until browned. Drain excess fat.
  2. Stir in garlic powder, chili powder, salt, and pepper.
  3. Grease a 9×13-inch baking dish. Layer four tortillas at the bottom.
  4. Spread half of the seasoned beef mixture over the tortillas. Top with half of the black beans, corn, and enchilada sauce, followed by half of the shredded cheese.
  5. Repeat layering with remaining ingredients.
  6. Cover with remaining enchilada sauce and cheese.
  7. Cover with aluminum foil and bake for 20 minutes.
  8. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
  9. Serve hot with optional toppings.

Notes

Let the casserole rest for a few minutes before serving for easier slicing. Switch up the protein or add extra veggies for a personal twist.
