A comforting and hearty Beef Enchilada Casserole layered with seasoned beef, black beans, cheese, and enchilada sauce, perfect for family gatherings.
Ingredients
- 1 pound ground beef
- 1 can (15 oz) red enchilada sauce
- 8 corn tortillas
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: sour cream, cilantro, sliced jalapeños
Instructions
- Cook the ground beef and diced onion in a large skillet over medium heat until browned. Drain excess fat.
- Stir in garlic powder, chili powder, salt, and pepper.
- Grease a 9×13-inch baking dish. Layer four tortillas at the bottom.
- Spread half of the seasoned beef mixture over the tortillas. Top with half of the black beans, corn, and enchilada sauce, followed by half of the shredded cheese.
- Repeat layering with remaining ingredients.
- Cover with remaining enchilada sauce and cheese.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden brown.
- Serve hot with optional toppings.
Notes
Let the casserole rest for a few minutes before serving for easier slicing. Switch up the protein or add extra veggies for a personal twist.
