Description

Savory beef enchiladas wrapped in tortillas and smothered with rich red sauce, creating a delightful family meal.


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 1 cup red enchilada sauce
  • 1 medium onion, finely chopped
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped


Instructions

  1. In a skillet over medium heat, cook the ground beef and chopped onion until browned, approximately 6-8 minutes. Drain any excess fat.
  2. Stir in 1 cup of red enchilada sauce and let it simmer for about 5 minutes.
  3. Fill each tortilla with the beef mixture, sprinkle cheese on top, and roll them tightly.
  4. Place the rolled tortillas seam-side down in a prepared baking dish.
  5. Pour any remaining enchilada sauce over them and top with extra cheese.
  6. Bake at 375°F (190°C) for about 25 minutes, or until hot and bubbly.
