Ingredients
- 1 lb lean ground beef
- 8 corn tortillas
- 1 cup red enchilada sauce
- 1 medium onion, finely chopped
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup fresh cilantro, chopped
Instructions
- In a skillet over medium heat, cook the ground beef and chopped onion until browned, approximately 6-8 minutes. Drain any excess fat.
- Stir in 1 cup of red enchilada sauce and let it simmer for about 5 minutes.
- Fill each tortilla with the beef mixture, sprinkle cheese on top, and roll them tightly.
- Place the rolled tortillas seam-side down in a prepared baking dish.
- Pour any remaining enchilada sauce over them and top with extra cheese.
- Bake at 375°F (190°C) for about 25 minutes, or until hot and bubbly.
Notes
