Description

A refreshing and hearty healthy chicken salad featuring crunchy celery, sweet grapes, and nutty pecans, all brought together with a creamy dressing.


Ingredients

  • 2.5 cups cooked, diced or shredded chicken
  • 3 stalks of celery – about 1/2 cup diced
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1-2 teaspoon fresh lemon zest
  • Salt and pepper – to taste


Instructions

  1. Prepare the grapes by soaking them in a bowl of water with 1 teaspoon of baking soda for about five minutes. Rinse and dry before slicing.
  2. In a medium bowl, combine the grapes, diced chicken, celery, chopped pecans, chopped red onion, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, and lemon zest.
  3. Toss everything together gently until well combined. Adjust seasoning with salt and pepper as needed.
  4. Serve immediately or refrigerate for a few hours to allow flavors to meld.
