Description
A refreshing and hearty healthy chicken salad featuring crunchy celery, sweet grapes, and nutty pecans, all brought together with a creamy dressing.
Ingredients
- 2.5 cups cooked, diced or shredded chicken
- 3 stalks of celery – about 1/2 cup diced
- 1 cup sliced grapes
- 1/3 cup chopped pecans
- 1/3 cup chopped red onion
- 1/2 cup plain Greek yogurt
- 1/4 cup mayo
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1-2 teaspoon fresh lemon zest
- Salt and pepper – to taste
Instructions
- Prepare the grapes by soaking them in a bowl of water with 1 teaspoon of baking soda for about five minutes. Rinse and dry before slicing.
- In a medium bowl, combine the grapes, diced chicken, celery, chopped pecans, chopped red onion, Greek yogurt, mayonnaise, Dijon mustard, lemon juice, and lemon zest.
- Toss everything together gently until well combined. Adjust seasoning with salt and pepper as needed.
- Serve immediately or refrigerate for a few hours to allow flavors to meld.
Notes
Chill your chicken before use for a cooler salad. Feel free to experiment with additional seasonings and ingredients for variety.
