Ingredients
- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 5 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
- Add carrots and celery, cooking until tender.
- Stir in the chicken broth and bring to a simmer.
- Mix in the shredded chicken and dried thyme, cooking for another 5 minutes.
- Lower the heat and gradually stir in the heavy cream. Season with salt and pepper.
- Serve hot, garnished with chopped parsley.
Notes
For enhanced flavor, use homemade chicken broth and adjust seasoning to taste. Add lemon juice for an extra twist.
