Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • ½ cup plain Greek yogurt (full-fat preferred)
  • ¼ cup olive oil
  • Zest of one lemon

  • 4-5 cloves garlic (minced or pressed)
  • 2 tablespoons dried Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper


Instructions

  1. Prepare the marinade. In a mixing bowl, whisk together Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, Italian seasoning, salt, and pepper until smooth.
  2. Place the chicken thighs in the marinade, ensuring they are evenly coated. Marinate for at least 15 minutes at room temperature or overnight in the refrigerator.
  3. Preheat the oven to 425°F and prepare your baking sheet lined with aluminum foil.
