Delicious oven-baked Greek chicken thighs marinated in yogurt, lemon, and garlic for a flavorful weeknight meal.
Ingredients
- 1.5 pounds boneless skinless chicken thighs
- ½ cup plain Greek yogurt (full-fat preferred)
- ¼ cup olive oil
- Zest of one lemon
- â…“ cup lemon juice
- 4-5 cloves garlic (minced or pressed)
- 2 tablespoons dried Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Prepare the marinade. In a mixing bowl, whisk together Greek yogurt, olive oil, lemon zest, lemon juice, minced garlic, Italian seasoning, salt, and pepper until smooth.
- Place the chicken thighs in the marinade, ensuring they are evenly coated. Marinate for at least 15 minutes at room temperature or overnight in the refrigerator.
- Preheat the oven to 425°F and prepare your baking sheet lined with aluminum foil.
- Arrange the marinated chicken in a single layer on the baking sheet.
- Bake the chicken in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before serving.
Notes
For added flavor, bring the leftover marinade to a boil and drizzle over the chicken before serving. You can also add vegetables like bell peppers or zucchini while baking.
