- – salt and freshly ground black pepper, to taste
- – 2 15 oz cans (850 g) great northern beans
- – 1 cup (240 ml) plain Greek yogurt
- – 1 cup (150 g) corn (frozen or fresh)
- – 2 heaping cups (300 g) cooked beef, shredded (rotisserie or left-over beef*)
- – Fresh cilantro
- – shredded cheese
- – tortilla chips
- – green onions
- – avocado
Instructions
- Warm the olive oil in a large pot over medium-high temperature. Toss in the onion and cook until it becomes tender, about 3-5 minutes. Incorporate the garlic and sauté for another 30 seconds.
- Pour in the chicken broth, diced green chilies, cumin, cayenne pepper, paprika, oregano, and lime juice. Add salt and black pepper according to your preference.
- Rinse the beans thoroughly in a colander.
- Take a generous scoop of the beans and place them in a blender along with a little broth from the pot. Blend until you achieve a smooth consistency. (This step is optional but contributes to the creamy and thick texture desired for this chili.)
- Introduce the blended beans, whole beans, and corn into the pot. Allow the mix to come to a gentle boil and let it cook without a lid for 15 to 30 minutes.
- Take the pot off the heat and mix in the Greek yogurt and shredded beef.
- Dish out the chili and top it with cilantro, shredded cheese, avocado slices, and tortilla chips if you like.
Notes
- Rinse the great northern beans thoroughly to remove excess sodium and starch, which can impact the overall flavor and texture of the chili.
- Opt for low-fat Greek yogurt instead of the plain version for a lighter option to reduce the calorie and fat content of the dish.
- Use freshly squeezed lime juice for a vibrant and zesty flavor, as bottled lime juice may lack the freshness needed in the chili.
