  • – 1/2 small lime, juice from

  • – 2 15 oz cans (850 g) great northern beans
  • – 1 cup (240 ml) plain Greek yogurt
  • – 1 cup (150 g) corn (frozen or fresh)
  • – 2 heaping cups (300 g) cooked beef, shredded (rotisserie or left-over beef*)
  • – Fresh cilantro
  • – shredded cheese
  • – tortilla chips
  • – green onions
  • – avocado


Instructions

  1. Warm the olive oil in a large pot over medium-high temperature. Toss in the onion and cook until it becomes tender, about 3-5 minutes. Incorporate the garlic and sauté for another 30 seconds.
  2. Pour in the chicken broth, diced green chilies, cumin, cayenne pepper, paprika, oregano, and lime juice. Add salt and black pepper according to your preference.
  3. Rinse the beans thoroughly in a colander.
  4. Take a generous scoop of the beans and place them in a blender along with a little broth from the pot. Blend until you achieve a smooth consistency. (This step is optional but contributes to the creamy and thick texture desired for this chili.)
