Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound ground turkey or chicken
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 can (4 ounces) diced green chiles
- 1 teaspoon cumin
- 1 teaspoon oregano
- 4 cups chicken broth
- Salt and pepper to taste
- 1 cup corn kernels (frozen or fresh)
- 1 cup shredded cheese (optional, for serving)
- Chopped cilantro (optional, for serving)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautƩing until softened.
- Add the ground turkey or chicken and cook until browned, breaking it apart with a spoon to ensure even cooking.
- Stir in the white beans, diced green chiles, cumin, oregano, chicken broth, salt, and pepper. Bring to a boil, allowing the flavors to mingle.
- Reduce the heat and simmer for about 20 minutes.
- Stir in the corn kernels, cooking for an additional 5 minutes until heated through.
- Serve hot, topped with shredded cheese and cilantro if desired.
Notes
For a creamier texture, blend half of the white beans before adding them. Allowing the chili to sit overnight in the fridge enhances the flavors.
