Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey or chicken
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 1 cup corn kernels (frozen or fresh)
  • 1 cup shredded cheese (optional, for serving)
  • Chopped cilantro (optional, for serving)


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautƩing until softened.
  2. Add the ground turkey or chicken and cook until browned, breaking it apart with a spoon to ensure even cooking.
  3. Stir in the white beans, diced green chiles, cumin, oregano, chicken broth, salt, and pepper. Bring to a boil, allowing the flavors to mingle.
  4. Reduce the heat and simmer for about 20 minutes.
  5. Stir in the corn kernels, cooking for an additional 5 minutes until heated through.
  6. Serve hot, topped with shredded cheese and cilantro if desired.

Notes

For a creamier texture, blend half of the white beans before adding them. Allowing the chili to sit overnight in the fridge enhances the flavors.
