Ingredients
- 1 lb (454 g) chicken breasts
- Salt, pepper, garlic powder
- 3 tbsp (45 ml) vegetable oil
- 3 tbsp (23 g) flour
- 2 cups (473 ml) chicken broth
- 1/2 tsp (2.5 ml) each of salt, pepper, oregano, and thyme
- 1 tsp (5 ml) each of paprika, onion powder, garlic powder
- 12 oz (340 g) bag of frozen mixed veggies
- 8 count canned Biscuits
Instructions
- Prepare the biscuits by following the package instructions.
- Slice the chicken breasts lengthwise to reduce their thickness. Lightly sprinkle them with salt, pepper, and garlic powder.
- Heat 3 tablespoons of vegetable oil in a skillet over medium-high heat. Once hot, incorporate 3 tablespoons of flour, stirring constantly until fully blended. Continue stirring for a few more minutes.
- Pour in 2 cups of chicken broth and mix thoroughly. Add salt, pepper, oregano, thyme, paprika, onion powder, and garlic powder for seasoning. Introduce the frozen mixed vegetables. Stir the mixture well, and when it begins to simmer, place the chicken into the skillet.
- Ensure the chicken is submerged in the sauce, cover with a lid, and reduce the heat to medium-low. Allow it to cook for 10-15 minutes or until the chicken’s internal temperature reaches 165 degrees Fahrenheit. My chicken was done in about 10 minutes since it was quite thin.
- Tear the chicken into pieces and serve it atop the biscuits! Enjoy your meal! Let me know if you give it a try.
Notes
- Ensure the chicken stays juicy by avoiding overcooking it; use a meat thermometer to check for an internal temperature of 165°F.
- Customize the seasoning to suit your taste preferences by adjusting the amount of herbs and spices listed.
- For a faster option, consider using pre-cooked or rotisserie chicken instead of cooking chicken breasts from scratch.
