Ingredients
- 1 tsp (5 ml) smoked paprika
- 1 tsp (5 ml) regular paprika
- 1 tsp (5 ml) salt
- 1/2 tsp (2.5 ml) onion powder
- 1/2 tsp (2.5 ml) garlic powder
- 3/4 tsp (4 ml) cayenne pepper
- 1/2 tsp (2.5 ml) fresh cracked black pepper
- 1/4 tsp (1.25 ml) dried oregano
- 1/4 tsp (1.25 ml) dried thyme
- 1/4 tsp (1.25 ml) dried basil
- 2 lbs (900 g) boneless skinless chicken breasts
- 1 tbsp (15 ml) vegetable oil (such as avocado oil or other high heat oil)
- 2 tbsp (30 ml) vegetable margarine (softened)
- 1 clove garlic (minced)
- lemon for serving (optional)
- fresh parsley finely chopped for serving (optional)
Instructions
- PREP: Set your oven to 350°F (175°C) to preheat. Heat a cast iron skillet over medium-high heat. Use a paper towel to dry the chicken breasts.
- SEASON: In a small bowl, combine the blackening spices. Evenly coat the chicken with this spice blend. If using a meat thermometer, insert it into the thickest section of the chicken now.
- SEAR: Pour avocado oil into the hot skillet and spread it around. Place the spiced chicken pieces in the skillet in a single layer. Cook them for about 5 minutes on one side, until a dark crust forms.
- BAKE: Turn the chicken over and place the skillet in the oven. Bake until the chicken’s internal temperature reaches 160°F (71°C), which should take around 10-15 minutes depending on thickness. (The chicken will continue cooking as it rests).
- FINISH: Take the skillet out of the oven and place it over medium heat. Add the margarine and minced garlic to the pan. Stir and cook for about 1 minute before removing from heat. Spoon the garlic-margarine mixture over the chicken.
- REST: Move the chicken to a cutting board and let it sit for 5-10 minutes before slicing. The chicken’s temperature should rise to 165°F (74°C) during this time.
- SERVE: Garnish with chopped parsley and a squeeze of lemon. Pair with your desired accompaniments!
