Juicy marinated chicken thighs grilled to perfection on a flat-top grill, providing a delightful meal for busy weeknights.
Ingredients
- 6 boneless, skinless chicken thighs
- 1/4 cup + 2 tablespoons soy sauce (divided)
- 2 tablespoons butter
- 2 teaspoons garlic (minced)
- Extra virgin olive oil (or avocado oil)
- Kosher salt
- Ground black pepper
Instructions
- Marinate chicken: Place chicken in a glass bowl and add 1/4 cup soy sauce; toss to coat. Set aside while you prep the remaining items.
- Combine 2 tablespoons butter and 2 teaspoons garlic in a small bowl; set aside.
- Bring the flat-top grill to medium-high heat. Add a tablespoon of olive oil and spread it over the flat top. Place marinated chicken thighs on the hot cooktop, seasoning with kosher salt and ground black pepper.
- Close the lid and let cook for 2-3 minutes. Open and drizzle with a little soy sauce, then add approximately 1 tablespoon of garlic butter. Close the lid and let cook for another minute or two.
- Open and flip the chicken. Season the other side with salt and pepper, add another tablespoon of garlic butter, and drizzle with a bit more soy sauce. Cook until the internal temperature reaches 162°F.
- Transfer to a plate and let the chicken rest. The internal temperature will continue to rise to 165°F while they rest. Slice or cut into bite-sized pieces and serve as-is, on a salad, in an easy burrito bowl, or in fantastic Blackstone chicken tacos!
Notes
For deeper flavor absorption, marinate the chicken for a few hours or overnight if time allows.
