A quick and easy Blackstone fried rice recipe made with cooked rice, fresh vegetables, and eggs, perfect for busy weeknights.
Ingredients
- 3 cups cooked rice
- 2 tablespoons vegetable oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, chopped
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Heat the Blackstone grill over medium-high heat and add the vegetable oil.
- Add the mixed vegetables and green onions, and cook until tender.
- Push the vegetables to one side of the grill and pour the beaten eggs on the other side. Scramble the eggs until fully cooked.
- Add the cooked rice to the grill, mixing it with the vegetables and eggs.
- Pour the soy sauce and sesame oil over the rice, stirring to combine.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes until heated through, then serve.
Notes
Use cold, day-old rice for the best texture. Feel free to swap in other vegetables or proteins like chicken or shrimp.
