Description

Delicious and flavorful quesadillas featuring smoky BBQ chicken with a hint of sweet heat from hot honey, perfect for weeknight dinners or gatherings.


Ingredients

  • Cooking oil of choice
  • 1 pound boneless, skinless chicken thighs (or chicken breasts)
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more to drizzle in quesadillas)
  • 2 tablespoons hot honey (plus more to drizzle in quesadillas)
  • 4 large burrito-size flour tortillas
  • 3 cups shredded cheese of choice
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, jalapenos


Instructions

  1. Preheat the griddle to medium heat and drizzle with cooking oil.
  2. Add the seasoned chicken to the griddle, seasoning with kosher salt, pepper, and BBQ seasoning. Cook for about 6 minutes, mixing occasionally.
  3. Drizzle the chicken with BBQ sauce and hot honey. Cook for an additional 2 minutes, blending well.
  4. Remove the chicken from the griddle and reduce the heat to medium-low.
  5. Add more cooking oil and lay the tortillas flat on the griddle. Sprinkle half of the cheese on one half of each tortilla.
  6. Spoon the chicken mixture onto the cheesy side. Drizzle more BBQ sauce and hot honey on top, and add chopped cilantro if desired. Finish with the remaining cheese.
  7. Fold the tortilla over the filling and cook for 1-2 minutes per side until the cheese melts and tortillas are crispy.
  8. Remove the quesadillas from the griddle and cut into wedges.

Notes

Use a good-quality cooking oil for flavor. Consider marinating chicken beforehand for enhanced taste.
